Rutabaga- vegetarian fine dining
Vegetarian | Rutabaga opened in 2017 and is one of Stockholm's few vegetarian gourmet restaurants. Its run by michelin star chef Mathias Dahlgren, who is one of Sweden's most famous chef, and you'll find it at Grand Hotel's ground floor.
What's usually lacking when you tasting vegetarian gourmet dishes is the protein. This is not an exception at Rutabaga. The menu with medium dishes lacked real vegetable protein sources except from a dish with white beans. A burrata with sourdough bread had a price tag of 245 SEK and what you basically had was a large piece of burrata with bread that was dry and tasteless. The mushroom croquettes had a nice crispy deep-fried surface but tasted very little truffle and mushroom. The deep-fried avocado had however a great texture with rich flavours from soya and kimchi.
To summarize the dishes they lacked innovative flavours and protein sources, took some short cuts for creating umami by adding lots of parmesan, browned butter and truffle, had few plant based options on the menu, and was really pricy eventhough you left the restaurant hungry (we went for a vegan Max hamburger afterwards). Despite Mathias being one of Sweden's best chefs, I'll stay away from Rutabaga for a while now.
